Ingredients for 4 servings:

  • 500 g spaetzle
  • 2 stalk(s) leeks
  • 2 bell peppers, yellow
  • ½ bunch parsley
  • 4 eggs
  • 125 g cheese (Gouda), grated
  • 200 ml cream
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the spaetzle in plenty of boiling salted water according to the package instructions for about 10 minutes. Rinse and trim the leeks, cut them into thick rings, and add them to the spaetzle about 3 minutes before the end of the cooking time. Drain both and let them drain in a sieve. Preheat the oven to 200°C. Wash and trim the bell peppers and cut them into strips. Rinse the parsley, shake dry, and finely chop the leaves. Mix the eggs, cheese, and cream together and season with salt and pepper. Grease a baking sheet, combine all the ingredients, and spread them on the baking sheet. Bake in the oven for about 30 minutes. Garnish with parsley, if desired.
