Frittata with peas

Ingredients for 1 servings:

  • 60 g peas, frozen
  • Salt and pepper, white
  • 4 spring onions
  • 1 large egg(s)
  • 2 tbsp milk
  • 2 tbsp Parmesan, freshly grated
  • 6 leaves basil, cut into strips
  • 1 tsp olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the peas according to the package instructions. Cut the spring onions into 3 cm pieces. Whisk together the egg, milk, Parmesan cheese, basil strips, salt, and pepper. Brush the bottom of a hot, nonstick pan (no more than 20 cm in diameter) with oil. Fry the peas and spring onions for about 1 minute, stirring occasionally. Add the egg mixture, cover, and let set over low to medium heat. Transfer the frittata to a plate, return it to the pan with the other side, and cook for another 2 minutes. Serve with a leaf salad. Tip: Also delicious with pea pods.
