Pasta casserole with smoked tofu, leek and tomatoes in cream sauce

Ingredients for 4 servings:

  • 500 g pasta
  • oil
  • 1 onion(s)
  • 200 g smoked tofu
  • 1 stalk(s) leek
  • 4 tomatoes
  • Salt
  • pepper
  • Paprika powder
  • 200 ml cream
  • 2 tbsp vegetable stock powder
  • Oregano, dried
  • Sauce thickener, light
  • 1 pack of grated cheese, e.g. Gouda

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

quick, easy and vegetarian

Pre-cook the pasta in salted water. It should still be relatively firm, then pour it into a casserole dish. Chop the vegetables and smoked tofu into small pieces. Heat a little oil in a saucepan, add the onions, then the smoked tofu, then the leeks, tomatoes, salt, pepper, and paprika. Deglaze with 200 ml cream and 200 ml water. Add the vegetable stock and a little oregano, season to taste, and thicken with a sauce thickener. Pour the sauce over the pasta, sprinkle with cheese, and bake in the oven at 200°C for about 15 minutes, until the cheese melts and is golden yellow.
