Pasta De Luxe with Dill Foam
The perfect pasta de luxe with dill foam recipe with a picture and simple step-by-step instructions.
- 200 g Shrimp peeled deveined
- Salt
- 100 g Beans
- 0,5 bunch Fresh dill
- 1 Shallot
- 1 Clove of garlic
- 1,5 tbsp Butter
- 200 ml Cream
- 400 g Pasta
- Pepper
- Sugar
- Let the shrimp defrost if necessary. Bring the salted water to the boil for the pasta. In the meantime, wash and clean the beans and cut them into oblique pieces. Pluck the dill tips, peel off the shallot and garlic clove and cut into large cubes.
- Sauté shallots and half of the garlic clove in a saucepan with 1/2 tbsp butter, add the cream and dill tips, bring to the boil. Simmer the sauce over a low heat for about 10 minutes.
- Cook the pasta in salted water according to the instructions on the package.
- Sauté the beans in a pan with 1/2 tbsp butter for about 5 minutes, season with salt, pepper and a pinch of sugar, remove. Briefly fry the remaining garlic and prawns in a pan with 1/2 tbsp butter.
- Put some of the dill aside for the garnish, stir in the rest. Foam the sauce with the hand blender. Drain the noodles, mix with the prawns and beans. Spread on plates, pour sauce on top and serve garnished with dill tips.
