Ingredients for 3 servings:
- 1 slice(s) toast or breadcrumbs
- some milk
- 250 g minced meat, mixed
- 1 tsp mustard
- 1 tsp tomato paste
- 1 garlic clove(s)
- salt and pepper
- Parsley
- ½ tsp cumin powder
- Paprika powder, sweet
- 1 egg(s)
- 1 onion(s)
- 250 g mushrooms
- 150 ml vegetable stock, approx.
- 250 ml Cremefine, 7%
- salt and pepper
- Paprika powder, sweet
- 250 g pasta
- 1 tsp cornstarch, if needed
- some oil for frying, if necessary
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Crumble the toast in a bowl and soak it in a little milk. Place the minced meat in a bowl and add the soaked toast crumbs, mustard, tomato paste, and garlic clove. Season the mixture with salt, pepper, parsley, cumin, and paprika. Whisk the egg in a bowl and mix it well into the mixture with a spoon. Let it rest briefly. In the meantime, finely chop the onion and slice the mushrooms. Moisten your hands and form small, walnut-sized meatballs from the meat mixture. Heat a little oil in a pan and fry the meatballs for about 5 minutes on all sides until golden brown, not too high. Then remove them from the pan. For a low-fat version, cook the meatballs in the air fryer for about 15 minutes at 180°C. In the meantime, boil the pasta water and cook the pasta until al dente. It should still have some bite. First, cook the onion in the pan until translucent, then add the mushrooms. Once the onions and mushrooms have taken on some color, deglaze with the vegetable stock. Reduce the heat to medium. Add the Cremefine and season with salt, pepper, and paprika. Before draining the pasta, add 1-2 ladles of pasta water to the pan. Drain the pasta and add it to the pan along with the meatballs, mixing well. If you like, you can also add a little parsley. Reduce the heat to low and let the pan simmer for a good 5 minutes, stirring frequently. If desired, mix a little more cornstarch with a splash of milk and stir in. Then bring the pan back to the boil briefly. Finally, season to taste and serve.
