Ingredients for 3 servings:

  • 300 g pasta, already cooked
  • 2 eggs, hard-boiled
  • 1 m.-sized onion(s)
  • 2 garlic cloves
  • 50 g Emmental cheese
  • 1 handful of mixed fresh herbs
  • 2 eggs, fresh
  • salt and pepper
  • some breadcrumbs
  • some clarified butter

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

a simple dish

Put the cooked pasta and the peeled, hard-boiled eggs through a meat grinder. Peel and finely dice the onions and garlic. Lightly fry both in a little hot clarified butter. Coarsely grate the cheese. Mix the pasta with the onions, fresh eggs, cheese, and finely chopped fresh herbs to form a workable dough. Season with salt and pepper. With wet hands, form apricot-sized dumplings. Flatten these in breadcrumbs and fry in clarified butter until golden brown. Keep the finished cakes warm in the oven until they are all cooked through. Serve the finished cakes with vegetables, such as carrots, and salad. Pasta patties are a Lenten dish that may sound a bit strange at first. They are often served with a green salad in monasteries.
