Pasta salad with soft cheese

Ingredients for 4 servings:

  • 500 g pasta
  • 200 g soft cheese or sheep’s cheese
  • 2 bell peppers, red
  • 1 pot of basil
  • 1 clove(s) garlic
  • 7 tbsp white wine vinegar
  • 6 tbsp olive oil
  • 1 salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 8 minutes

Cook the pasta, drain, rinse, and let cool. Wash the bell peppers and slice them into strips. Wash and finely chop the basil. Mince the garlic and mix with the vinegar, basil, salt, and pepper. Whisk in the oil. Toss the pasta and bell peppers with the dressing, let stand for 30 minutes, and then season the salad again with salt and pepper. Tear the soft cheese into small pieces or crumble the feta cheese. Fold the cheese into the salad just before serving.
