Ingredients for 5 servings:
- 400 g pasta, e.g. spiral pasta or small broken macaroni
- 300 ml dressing (yogurt dressing), low calorie
- 2 onions, red
- 2 red bell peppers
- 1 small can of peas (alternatively 1/2 pack of frozen peas)
- 1 small jar of gherkins (cornichons)
- 3 sweet and sour apples
- salt and pepper
- Paprika powder
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cook the pasta in salted water until al dente and set aside to cool. Cut the onions and bell peppers into small pieces (approx. 1 cm²), as well as the gherkins and apples. Place them in a sufficiently large bowl with the peas. Add the cooled pasta and the dressing to the salad. Season to taste with salt, pepper, and paprika. Note: This vegetable is just one example of what might be added. You can also add other vegetables, such as corn or red beans, or perhaps cucumber or tomatoes, to the salad. Eggs, olives, leeks, and spring onions are also delicious. If you want to put together the salad as a complete meal, you can also mix in fried meat cubes or sausage, or even small meatballs. And if you want to put in more work, you can also make the yogurt dressing yourself; I will post the recipe for this separately.
