Pasta with apple and pepper sauce

Ingredients for 2 servings:

  • 250 g pasta, preferably fusilli
  • 2 tbsp olive oil
  • 1 onion(s)
  • 2 cloves garlic
  • 1 chili pepper(s)
  • 50 g bacon, as desired
  • 1 apple
  • 1 red bell pepper(s)
  • 1 shot of white wine
  • 1 cup vegetable broth
  • 1 tbsp herb cream cheese
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Add the pasta to boiling salted water and cook according to the instructions until al dente. Meanwhile, finely chop or dice the onion, garlic, chili pepper, and bacon. Fry the onion in olive oil, then the garlic, chili pepper, and bacon. Quarter the apple (with the skin on, if you like), then halve the quarters crosswise and cut into thin slices. Cut the bell pepper into thin strips. Add both to the pan and fry for a few minutes. Deglaze with a splash of white wine and the vegetable stock, stir in the cream cheese, and simmer for a few more minutes. Mix with the pasta and season with salt and pepper.
