Pasta with broccoli and bratwurst

Ingredients for 4 servings:

  • 360 g pasta, small, e.g. penne, short macaroni, farfalle
  • 500 g broccoli
  • 3 tbsp extra virgin olive oil, cold squeezed
  • 2 garlic cloves
  • 1 chili pepper
  • 250 g sausages, coarse
  • 100 ml cream
  • e.g. salt and pepper
  • e.g. Parmesan, freshly grated

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Pasta with broccoli and sausage. A dish from Calabria.

Cut the florets off the broccoli and cook in salted water for 8 minutes until soft. Meanwhile, deseed and finely chop the chili pepper. Peel and finely chop the garlic cloves, remove the skin from the sausages and cut the sausages into pieces about 2 cm in size. Heat the olive oil in a saucepan and fry the garlic and chili pepper over very low heat. Add the sausage pieces, increase the heat and fry the sausages until crispy, mashing them with a large-pronged fork and turning occasionally. Meanwhile, cook the pasta in plenty of salted water until al dente. Once the broccoli is soft, drain it and add it to the pan with 100 ml of cream to the sausages and continue to simmer over low heat, stirring occasionally. Season with salt and pepper. Drain the pasta, mix it in, and serve the dish sprinkled with grated Parmesan.
