Ingredients for 4 servings:
- 1 onion(s), red
- some olive oil
- 200 g sausage
- 250 ml meat broth
- 300 g cherry tomatoes
- 8 green olives, pitted
- 8 black olives, pitted
- 8 basil leaves, chopped
- salt and pepper
- 50 g Parmesan, freshly grated
- 320 g pasta
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Peel and finely dice the onion. Peel and tear the skin from the sausage and shred it. Cut the tomatoes into small pieces and the olives into thin slices. Add the olive oil to a pan and fry the diced onions until translucent. Add the sausage pieces and fry briefly. Deglaze with the meat stock and reduce slightly. Add the tomatoes, olives, and basil, season with salt and pepper. Simmer with the lid closed for 10 minutes. Meanwhile, cook the pasta until al dente. Mix the pasta with the sauce, serve on plates, and sprinkle with grated Parmesan cheese.
