Pasta with cherry tomatoes, arugula and roasted seeds

Ingredients for 4 servings:

  • 500 g pasta, e.g. linguine
  • some olive oil
  • 250 g cherry tomatoes
  • 1 clove(s) garlic
  • 1 bag of seeds (salad seed mix)
  • 1 bunch arugula
  • Parmesan
  • basil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the pasta in plenty of salted water until al dente. Wash the arugula and set aside. Heat olive oil in a pan (just enough to cover the bottom) and sauté the garlic. Quarter the cherry tomatoes, add them, and sauté until they release some of their juices. Toast the lettuce seeds in another pan without fat. When they are nice and crispy, stir them into the sauce. Season with salt, pepper, and fresh basil. Drain the pasta and add it directly to the sauce in the pan along with a little of the pasta water. Mix well. Plate the pasta and garnish with arugula and Parmesan cheese.
