Pasta with dried tomatoes and feta cheese

Ingredients for 3 servings:

  • 300g pasta
  • 1 jar dried tomatoes in oil
  • 100 g feta cheese, made from sheep and goat milk
  • 10 basil leaves
  • 1 pinch(s) of salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

This is by far my favorite recipe and it’s super quick and easy to make.

First, cook the pasta according to the package instructions. Meanwhile, drain the tomatoes into a sieve to catch the oil. Slice the tomatoes into strips and chop the basil. Heat about 1-2 teaspoons of tomato oil from the jar in a large, wide pan and fry the sun-dried tomatoes. Just before the pasta is finished cooking, crumble the feta cheese over the tomatoes. Then, add the drained pasta directly to the pan and mix well with the tomatoes and feta. Finally, stir in the fresh basil and season with salt and pepper.
