Pasta with Fava Beans

Ingredients for 3 servings:

  • 1 ½ kg broad beans, fresh
  • 2 small garlic cloves
  • 1 small onion(s)
  • 4 tbsp, leveled olive oil
  • 1 vegetable stock cube
  • 375 g pasta

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Pasta with broad beans, simple

Remove the seeds from the broad beans, then skin them again and remove the two inner seeds. Heat 2 tablespoons of olive oil, sauté the chopped onion and garlic. Add the broad beans and sauté briefly. Add water until covered, add the vegetable stock cube, and cook for about 20 minutes. Purée everything with a hand blender, season with pepper, and pour over the cooked pasta, then drizzle with the remaining olive oil. You can also add cubes of cooked ham or chopped bacon, or cook sausage meat/salsiccia sausage meat formed into small dumplings for a short time.
