Ingredients for 4 servings:
- 350 g artichoke hearts in olive oil (from the jar)
- 500 g penne or other pasta
- Olive oil for frying
- 1 chili pepper(s)
- 2 garlic cloves
- salt and pepper
- 50 g arugula
- 250 g cherry tomatoes
- 100 g Parmesan
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Drain the artichokes and quarter them lengthwise. Finely chop the chili pepper and garlic cloves. Finely chop the cherry tomatoes and arugula. Finely grate the Parmesan cheese. Cook the pasta in plenty of salted water until al dente. Meanwhile, heat the olive oil, briefly sauté the garlic and chili, add the artichokes and tomatoes, and toss everything for a few minutes. Drain the pasta and immediately toss with the vegetables. Stir in the arugula and Parmesan cheese and enjoy!
