Pasta with green beans

Ingredients for 2 servings:

  • 250 g beans, green (fresh)
  • 1 clove(s) garlic
  • 1 onion(s)
  • 300 ml tomato(s), pureed
  • some salt
  • some black pepper
  • ½ chili pepper(s), (alternatively chili powder or similar)
  • some olive oil
  • some Parmesan cheese, for sprinkling
  • 300g pasta

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash the beans, trim the ends, and cook in a little salted water for 10 minutes (until cooked but still with a bite). Finely dice the onions and fry in olive oil. Then press and add the garlic and reduce the heat to low. Add the cooked beans and tomatoes and simmer for 5 minutes. Season with salt, pepper, and chili, if desired. Cook the pasta according to the instructions and add it straight from the pot to the sauce without draining it first. This way, the starch and salt in the pasta water gives the sauce a special kick. When serving, I like to sprinkle the pasta with Parmesan cheese to round off the recipe.
