Pasta with kohlrabi, feta cheese and olives

Ingredients for 2 servings:

  • 1 kohlrabi
  • 2 garlic cloves
  • 200 ml white wine or broth
  • 2 tbsp olive oil
  • 150g penne
  • 150 g feta cheese
  • 50 g black olives, pitted
  • 1 mint sprig(s)
  • Salt
  • 1 pinch(s) of cayenne pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the kohlrabi and cut it into slices, then into sticks. Peel the garlic and dice it finely. Sauté the kohlrabi and garlic in a pan with hot olive oil. Pour in the white wine or stock and simmer, covered, for about 10 minutes. Meanwhile, cook the pasta according to the package instructions until al dente. Cut the feta cheese into large cubes and roughly chop the olives. Drain the pasta in a colander. Add the pasta, feta cheese, and olives to the kohlrabi. Mix everything well and season gently with salt. Finely chop the mint and stir in if desired. Sprinkle with a little cayenne pepper.
