Pasta with lemon and feta sauce

Ingredients for 4 servings:

  • 500 g pasta
  • 1 pack of feta cheese, approx. 250 g
  • 1 bunch of spring onions
  • 1 cup of cream
  • 1 lemon(s), zest and juice
  • 1 garlic clove(s), chopped
  • salt and pepper
  • Sugar
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the pasta according to the package instructions. Meanwhile, prepare the sauce. First, place 3/4 of the feta and cream in a blender and blend until smooth. Sauté the garlic and 3/4 of the chopped spring onions in olive oil in a small saucepan. Add the feta cream and grated lemon zest and bring to a boil briefly. Season with salt, pepper, sugar, and lemon juice. Crumble the remaining feta and mix with the remaining spring onions. Mix the sauce with the cooked pasta and serve. Sprinkle the feta and spring onion mixture over the top and serve.
