Pasta with mushrooms and coarse sausage

Ingredients for 4 servings:

  • 4 small onions, red
  • 2 bell peppers
  • 2 garlic cloves
  • 1 large zucchini
  • 400 g mushrooms
  • 1 tbsp tomato paste
  • pepper
  • 1 tbsp spice mix, hot
  • 400 g bratwurst, coarse
  • 200 g sour cream
  • some Parmesan, grated
  • a few stalks of basil
  • 500 g pasta
  • some vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Finely chop the onions and garlic cloves and fry them in a little oil in a nonstick pan. Roughly chop the sausages and fry them as well. Once the sausages are browned, add the chopped vegetables. Cover the pan with a lid to help the vegetables soften more quickly. Then add the sour cream, tomato paste, and seasonings and simmer the sauce uncovered over low heat. Meanwhile, cook the pasta according to the package instructions. To serve, pour the sauce over the pasta and sprinkle with basil and Parmesan cheese.
