Pasta with peppers, tomatoes and green pesto

Ingredients for 1 servings:

  • 125g penne
  • 1 m.-sized onion(s)
  • ½ bell pepper(s), yellow or red
  • 10 cocktail tomatoes
  • 2 tbsp pesto genovese
  • Parmesan
  • olive oil
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the pasta al dente. Meanwhile, dice the bell peppers and sauté in olive oil. Finely dice the onion and add it. Halve the cherry tomatoes and sauté them briefly. Once the vegetables are cooked, add the pasta to the pan and heat briefly. Then remove the pan from the heat and stir in the pesto. Sprinkle with Parmesan cheese and serve immediately.
