Ingredients for 4 servings:
- 500g tagliatelle
- 500 g sausage
- 2 zucchinis
- 1 broccoli
- 2 onions, red
- 1 bunch of celery
- 500 ml dry white wine
- 500 ml vegetable stock
- 200 ml cream
- e.g. oregano
- e.g. rosemary
- n. B. Sage
- n. B. Thyme
- e.g. salt and pepper
- some oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Remove the sausage meat from the casings and form into small dumplings. Clean the vegetables and cut into bite-sized pieces. Peel and finely dice the onions. Heat the oil in a pan and fry the meatballs until crispy. Add the celery and onions and fry them too. Deglaze with a little white wine and add the vegetable stock. Add the broccoli and zucchini and cook for a few minutes (depending on how cooked you want the vegetables). In the meantime, bring the pasta water to a boil and cook the pasta in salted water until al dente, according to the package instructions. Add the cream to the sauce, add the herbs, and season to taste with salt and pepper. Add the cooked pasta to the sauce and simmer briefly. Serve, enjoy, and drink up the remaining white wine.
