Pasta with spinach and cheese sauce

Ingredients for 2 servings:

  • 80 g pasta (wholemeal pasta)
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 tsp olive oil or rapeseed oil
  • 200 g leaf spinach, fresh, or 100 g frozen
  • 30 g Gorgonzola
  • 50 g sour cream
  • 1 tsp pine nuts
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with whole wheat pasta, suitable for diabetics

Cook the (wholemeal) pasta according to the package instructions until al dente. Finely chop the onion and press the garlic, then sauté both in the oil until translucent. Roughly chop the spinach and add it, sautéing for about 5 minutes. Drain and reserve any liquid. Dice the cheese, mix with the cream, and add this mixture to the spinach. Heat gently, season with salt and pepper, and add some of the reserved liquid, if desired. Sprinkle the seeds over the sauce and serve with the pasta. Per serving: 13 g protein, 15 g fat, 36 g carbohydrates, 7 g fiber, approx. 2-3 BE
