Pasta with spinach, ricotta and white wine sauce

Ingredients for 2 servings:

  • 250 g pasta, e.g. E.g. spaghetti
  • 225 g ricotta
  • 200 g spinach, frozen, chopped
  • 100 ml white wine
  • 1 small onion(s), finely chopped
  • 2 cloves garlic, finely chopped
  • salt and pepper
  • pine nuts
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Toast the pine nuts in a pan without oil and set aside. While the pasta is cooking according to the package instructions, sauté the garlic clove and onion in the pan with olive oil until translucent. Deglaze with white wine and stir the ricotta into the wine. Finally, add the spinach and cook, stirring constantly. Season with salt and pepper to taste. Add the cooked pasta to the pan with a little pasta water, toss with the sauce, and let it simmer briefly. Serve on deep plates and sprinkle with the toasted pine nuts.
