Pasta with zucchini and mushrooms

Ingredients for 2 servings:

  • 1 onion(s), diced
  • 1 garlic clove(s), crushed
  • 1 tbsp olive oil
  • 1 zucchini, in small cubes
  • 200 g mushrooms, brown, finely chopped
  • 100g spaghetti
  • 2 tbsp cream cheese spread
  • 50 g cheese, grated, possibly Parmesan
  • 1 tbsp tomato paste
  • salt and pepper
  • Thyme
  • basil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Vegetarian

Sauté the onions and garlic in olive oil in a pan for 2 minutes. Then add the diced zucchini. Then add the finely chopped mushrooms. Meanwhile, cook the pasta in salted water. Add the tomato paste to the pan and sauté briefly. Deglaze with 2 ladles of the pasta cooking water and add the melted cheese. Season with basil, thyme, salt, and pepper. Add the cooked pasta to the pan. Sprinkle with grated cheese, such as Parmesan.
