Pasta with zucchini, tomatoes and feta sauce

Ingredients for 2 servings:

  • 4 tomatoes
  • 2 small zucchini
  • ½ feta cheese
  • some vegetable broth
  • some olive oil
  • salt and pepper
  • 1 tbsp tomato paste
  • possibly sauce thickener
  • some basil, dried
  • 250g spaghetti
  • n. B. Water (salt water)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the spaghetti in salted water as usual. Cut the tomatoes, zucchini, and feta cheese into small pieces. Add the tomatoes and zucchini to the pan with olive oil and sauté. Then add a little vegetable stock and season with salt, pepper, and basil. Then add the tomato paste. If the sauce is too runny, thicken with a little thickener. Finally, add the feta cheese and let it simmer for a moment. Drain the spaghetti and serve with the sauce.
