Pastasotto with caramelized radicchio

Ingredients for 4 servings:

  • 400 g risoni (rice-shaped pasta)
  • salt and pepper
  • 2 large onions, red
  • 2 garlic cloves
  • 1 radicchio
  • 3 tbsp olive oil
  • 2 tbsp brown sugar
  • 50 ml balsamic vinegar
  • 100 ml red wine
  • 100 g Parmesan

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the pasta in boiling salted water according to the package instructions until al dente, drain, and set aside. Peel the onions and garlic. Halve the onion and slice into rings, finely chop the garlic. Wash the radicchio, halve it, remove the stalk, and slice into strips. Heat the oil in a large pan, sauté the onions and garlic, add the radicchio, and sprinkle with sugar. Melt, then deglaze with balsamic vinegar and wine. Add the pasta and mix everything together, seasoning generously with salt and pepper. Grate the cheese and stir half of it into the pasta sauce. Sprinkle the rest on top and serve.
