Ingredients for 4 servings:

  • 500 g flour
  • 1 egg yolk
  • 125 g clarified butter
  • 1 tsp salt
  • 200 ml water
  • 1 onion(s), finely chopped
  • 1 garlic clove(s), crushed
  • 3 tbsp tomato paste
  • 250 g minced meat
  • 3 tbsp parsley, chopped
  • 3 eggs, hard-boiled
  • Olives, pitted
  • Oil for frying

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Brazilian pies

Mix the dough ingredients into a smooth, supple dough. Refrigerate for one hour. For the filling, heat a tablespoon of oil and briefly sauté the onion, garlic, and tomato paste. Add the minced meat and fry. Season with 1 teaspoon of salt and 1/2 teaspoon of pepper, then stir in the parsley. Roll out the dough thinly and cut out circles about 10 cm in size using a glass. Place 1 tablespoon of the filling on top, top with a slice of egg and/or an olive, and fold together. Press the pastries together with a fork until the typical ridges form. Deep-fry in hot oil. These ingredients are enough for about 20 pastries. Variation: the minced meat can be replaced with cheese mixture, crab mixture, chicken, or leftover roast meat.
