Patricia's plum cake with crumble

Ingredients for 1 servings:

  • 125 g butter
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 500 g flour
  • 1 packet of baking powder
  • 250 ml milk
  • 1,500 g plums
  • 150 g butter, cold
  • 200 g flour
  • 120 g sugar
  • 1 pinch of salt
  • 1 tsp cinnamon
  • Grease for the tray

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

Even beginners can do it and it tastes great!

To make the batter, simply beat the butter, sugar, vanilla sugar, salt, and eggs with a mixer until fluffy. Then combine the flour and baking powder and add them alternately with the milk until a creamy batter forms. Transfer the mixture to a greased baking sheet. Wash and dry the fruit, and remove any stones. Then place them upright on top of the batter. Next, make the crumble: Cut the cold butter into small pieces and place it in a bowl with the flour, sugar, salt, and cinnamon. Then rub the contents with your fingertips and press gently until medium-sized crumbles form. Don’t overwork it, or the butter will become too soft and sticky! Crumble it onto the filled plum cake and bake in a preheated oven at 200 degrees Celsius (400 degrees Fahrenheit) top/bottom heat for about 45 minutes. Baking makes even unripe fruit sweet.
