Pea Soup with Bacon Croutons
The perfect pea soup with bacon croutons recipe with a picture and simple step-by-step instructions.
- 1 liter Chicken broth
- 1 kg Peas
- 2 Discs Kaiserfleisch
- Lard
- 250 ml Cream
- Milk
- Salt
- Pepper
- Nutmeg
- Bring the chicken broth to the boil, add the peas and simmer for about 15 minutes. Then puree, I made it in a blender, it splatters less: D
- Add the cream to the pureed soup and possibly some milk if it is still too thick, bring to the boil again and season with salt, pepper and nutmeg.
- Cut the imperial meat into cubes, heat some lard in a pan and fry the bacon cubes until crispy.
- Serve the soup with the croutons and, depending on your taste, add a dollop of sour cream on top.
