Peach and passion fruit muffins

Ingredients for 1 servings:

  • 2 peaches
  • 240 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 120 g sugar
  • 100 g butter
  • 100 g crème fraîche
  • 140 ml passion fruit juice
  • 1 tsp orange(s), grated peel of an untreated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and finely dice the peaches. Combine the flour, baking powder, and baking soda in a bowl. In a second bowl, beat the egg, sugar, butter, crème fraîche, juice, and orange zest until fluffy. Sift the flour mixture into the bowl and stir in the peach pieces. Fill the batter into the cups of a greased muffin tin and bake in a preheated oven at 190°C for approximately 20-25 minutes.
