Peach cup muffins

Ingredients for 12 servings:

  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • ½ cup sugar
  • 4 tbsp oil
  • 1 cup buttermilk
  • 3 peach(s), ripe

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the flour with the baking powder and baking soda. Dice the peaches. Beat the eggs with the sugar until creamy, then stir in the oil and buttermilk. Add the flour mixture and the peach pieces and quickly mix by hand. Immediately fill the muffin tins, greased or lined with paper baking cups, and bake at 180°C for about 20-25 minutes. Garnish with apricots or icing if desired, or enjoy simply as is.
