Ingredients for 4 servings:

  • 4 eggs
  • 4 tbsp water, warm
  • 125 g sugar
  • 75 g flour
  • 50 g cornstarch
  • 1 tsp baking powder
  • 1 gr. can/n pear(s) (Williams)
  • 125 g chocolate (block chocolate)
  • 2 tbsp juice (pear juice), from the can
  • 2 cups of cream

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

For the batter, separate the eggs and beat the egg whites until stiff. Whisk together the egg yolks, water, and sugar, then mix in the sifted flour, cornstarch, and baking powder. Finally, fold in the beaten egg whites. Pour the batter into a springform pan and bake at 200°C for 15-18 minutes. Meanwhile, drain the pears, whip the cream until stiff, and melt the chocolate in a bain-marie. Spread about half of the cream on the sponge cake and place the pears on top. Mix the melted chocolate with the pear juice and drizzle over the pears using a tablespoon. Transfer the rest of the cream to a piping bag and pipe out the gaps or decorate the cake as desired. Important: use real block chocolate, not chocolate coating, for the topping.
