Ingredients for 2 servings:
- 200 ml pearl barley
- 600 ml water
- 2 tbsp raisins
- ½ tsp cinnamon
- ½ tsp ginger powder
- ½ tsp allspice powder
- ½ tsp cardamom powder
- 100 g berries, frozen
- 3 tbsp almonds or nuts, ground
- 1 tbsp flaxseed meal
- 2 tbsp applesauce
- n. B. Fruit, fresh
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
vegan and very filling
Bring the barley and raisins to a boil with the spices in the water and cook for 30 minutes (or according to the package instructions). Stir occasionally. Add the berries and almonds, reduce the heat to low, and let it swell for another 15 minutes. Serve in cereal bowls with applesauce, crushed flaxseed, and fresh fruit, if desired. Tip: If you soak the barley overnight (about 12 hours) in three times the amount of water, the cooking time is reduced to about 10 minutes. After the soaking time, drain the soaking water and cook the barley in the fresh water.
