Ingredients for 4 servings:
- 1 onion(s), chopped
- 25 g butter
- 500 g leek, chopped
- 130 g carrot(s), diced
- 30 g celeriac, diced
- 100 g pearl barley
- 1 ½ liters vegetable broth
- 400 g potatoes, diced
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Sauté the onions in a large pot with the butter. Add the leeks, carrots, and celery, stir, and simmer in a covered pan for 5 minutes. Add the pearl barley, broth, salt, and pepper, stir, and cook covered over low heat for 40 minutes. Then stir in the potatoes and simmer for another 20 minutes. Add a little more broth if desired. Season to taste.
