Pears, beans and bacon

Ingredients for 4 servings:

  • 4 slice(s) smoked belly, streaky, approx. 0.5 cm thick
  • 1 large onion(s)
  • 500 g green beans
  • 1 sprig(s) savory
  • 500 g potatoes, waxy
  • 4 pears (cooking pears)
  • 1 can pear(s), drained juice
  • 2 tbsp flour
  • Pepper, white
  • n. B. water

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Place the bacon slices and the finely chopped onion in 3/4 liter of water and 1/4 liter of pear compote juice and simmer for 20 minutes. Add the trimmed and washed beans and savory and simmer for another 15 minutes. Then add the peeled and diced potatoes and the washed whole cooking pears and simmer for another 15 minutes. When everything is cooked, whisk the flour with a little cold water, add it, and bring back to a boil briefly. Season the dish with white pepper and pear juice. Arrange the cooking pears separately on a warm plate with the stems facing up. Tip: This dish can be cooked without a lid; this allows the liquid to reduce optimally to form a sauce.
