Whether you should peel celery depends first of all on the subspecies used. The main difference here is between the rounded, brownish celeriac and the stick-like, green celery. It is better to peel the celeriac, which is often part of soup greens because the outer skin is hard and does not taste good. This gets in the way if you want to prepare celery schnitzel or celery puree. But you should also peel celery in the bulb form for a celery soup.
Peel the celeriac and eat raw or cooked
The best way to peel celery root is with a sharp knife and a vegetable peeler. First, wash the vegetables thoroughly under running water. Then use the knife to cut off the base of the leaf and any remaining roots. The peel can be removed with a large vegetable peeler. With this method, the least valuable pulp is lost. But you can also use the knife and cut off the outer skin in strips from top to bottom.

It is not absolutely necessary to peel celery (celery stalks), but the sometimes hard fibers in the skin can interfere with chewing. Especially if you want to eat the celery raw, peeling saves you from pulling strings from between your teeth. To clean, first cut off the stalk so that the stems come loose, and then the leaves. Don’t throw the latter away, they can be finely chopped and used like a spice. Then wash the stem vegetables carefully, especially on the lower part and in the grooves there are often bits of soil. Now the skin can be peeled off lane by lane with a vegetable peeler or knife – the procedure here is similar to that of rhubarb. The finished cleaned celery tastes good as a raw vegetable with a dip, as an ingredient in salads, soups, and green smoothies or can be used as a side dish for meat dishes.
