How to peel fresh shrimp for full flavor
You have the choice of removing the head and shell of fresh shrimp before cooking or at the table. It’s easier to do before cooking. To avoid a possible bitter taste when eating, remove the intestines beforehand.
Tip: Apply a step to all shrimp before moving on to the next instruction. This saves you time.
- Put the rinsed and patted dry shrimp aside within easy reach, for example in a bowl. Hold the body of the shrimp firmly with one hand while gently twisting the head with the other hand until it pulls off.
- Unclip the shell and legs with your fingers. Start at the head end and from the bottom.
- If you don’t remove the tail end, the shrimp are easy to grab for eating and dipping.
- Remove the intestines with a sharp knife. It is important not to injure it if possible, otherwise the contents may leak. It looks like a dark thread and is located on the dorsal side of the shrimp. Carefully cut along the casing until it is exposed and you can remove it completely with the knife.
- Finally, wash and pat dry and you are now ready to cook the shrimp.
