Ingredients for 4 servings:
- 2 tbsp olive oil
- 1 small onion(s)
- 2 cloves garlic
- 1 small carrot(s)
- 1 sprig of celery
- 800 g tomatoes (pizza), can
- 1 tbsp tomato paste
- 20 g basil
- Salt and pepper, black
- 500g penne
- some Parmesan, grated
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Heat oil in a large pan. Finely chop the onion and garlic, add, and fry for about 2 minutes. Finely dice the carrot and celery, add, and cook for another 2 minutes. Add the pizza tomatoes and tomato paste. Simmer for 20 minutes, stirring occasionally. Chop the basil, stir in, and season with salt and pepper. While the sauce is cooking, cook the pasta according to the package instructions. Serve sprinkled with grated Parmesan cheese.
