Ingredients for 3 servings:
- 400 g potatoes

- 10 g butter
- 500 g minced beef

- 2 tbsp breadcrumbs
- 5 tbsp milk
- 1 tbsp parsley
- salt and pepper
- 20 g butter
- 10 g flour
- ¼ liter of milk
- 150 g cranberries

Swedish meatballs are small, round, fried meatballs. They are usually served with boiled potatoes and lingonberries. Peel the potatoes and boil them in salted water as usual. Peel the onion, finely dice it, and sauté it in 10g of melted butter until translucent. Remove from the heat and let cool. Knead the minced meat with the egg, breadcrumbs, milk, and finely chopped parsley to form a meatball dough. Add the sautéed onions and season with salt and pepper as desired. Form the meatball dough into small, round balls. Heat the remaining 20g of butter in a pan and fry the meatballs until crispy on all sides. Reduce the heat to medium and finish frying the meatballs. Remove from the pan and keep warm. Then add the flour and sauté in the drippings. Add the milk and deglaze the flour while stirring constantly. Let the sauce simmer gently and season with salt and pepper to taste. Serve the meatballs with boiled potatoes and sauce on plates. Serve with the cranberries from the jar.
