Penne with green beans in tomato sauce

Ingredients for 2 servings:

  • 250g penne
  • 1 can of tomatoes, chopped
  • 200 g beans (runner beans), fresh
  • 1 tbsp soup powder
  • some herbs of Provence
  • 3 cloves garlic
  • olive oil
  • Thyme
  • rosemary
  • basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Trim the ends of the beans and run a peeler along the sides to remove any stringy texture. Cut the beans into diagonal pieces about 2 cm long. Meanwhile, cook the penne according to the package instructions. Finely chop the garlic cloves and fry them in a little olive oil for 2 minutes. Add the beans and fry for 10 minutes. Then add the tomatoes and soup mix and simmer uncovered over medium heat for about 15 minutes, until the tomato sauce has thickened slightly and the beans are tender. I like to add thyme, rosemary, and/or basil at the end.
