Penne with peppers and walnuts

Ingredients for 4 servings:

  • 400g penne
  • 100 g walnuts
  • 1 onion(s), chopped
  • 1 garlic clove(s), chopped
  • 2 red bell peppers, cut into strips
  • 200 ml vegetable stock
  • 2 tbsp crème fraîche or sour cream
  • lemon juice
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the penne in salted water according to the package instructions until al dente. Meanwhile, chop the walnuts and roast them without fat. Remove from the pan and let cool. Sauté the bell pepper, garlic, and onion in melted butter. Pour in the vegetable stock and crème fraîche. Season with salt, pepper, and cayenne pepper to taste. Add the walnuts. Mix with the pasta and serve hot. Tip: Serve sprinkled with chopped basil, if desired.
