Ingredients for 4 servings:

  • 4 tbsp olive oil
  • 1 head of radicchio (approx. 300 g)
  • 500g penne
  • salt water
  • 1 onion(s)
  • 2 cloves garlic
  • 250 ml white wine, semi-dry
  • salt and pepper
  • 1 peperoncini or fresh chili pepper, if desired
  • Parmesan or Grana Padano, grated

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Penne with a white wine and radicchio sauce

Cook the pasta in salted water until al dente. Dice the onions and sauté in the oil over medium heat. When the onions are nice and soft, add the crushed garlic (and the chili pepper or peperoncini) and sauté briefly. Then add the sliced ​​radicchio and cook, stirring constantly, until the radicchio has wilted. Deglaze with white wine and reduce. Season with salt and pepper. Toss with the cooked pasta. Sprinkle with grated Parmesan or Grana Padano.
