Colorful noodles with vegetables

Ingredients for 4 servings:

  • 350 g pasta, colored
  • 300 g carrot(s), tender
  • 300 g kohlrabi
  • 1 tbsp oil
  • 50 ml vegetable stock
  • 200 g cream
  • 2 tbsp parsley, chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions. Thinly slice the carrots and cut the kohlrabi into thin sticks. Heat the oil in a pan and briefly sauté the vegetables. Pour in the broth and cream. Simmer everything over low heat for 5-10 minutes. Stir in the herbs. Season with salt and pepper. Toss the drained pasta with the vegetables. Other vegetables (e.g., cauliflower, broccoli) can also be used.
