Penne with spinach and curry

Ingredients for 2 servings:

  • 180g penne
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 tsp oil
  • 250 g leaf spinach
  • 200 g yogurt, possibly low-fat
  • 1 tbsp flour
  • 1 tbsp curry
  • ½ lemon(s), the juice
  • Salt

Instructions

quick, creamy and low-calorie with yogurt

Cook the penne according to the package instructions. Finely chop the onions and garlic. Sauté in oil in a large, lidded pan until translucent. Wash the spinach leaves, roughly chop them, and add them to the onions after just a few minutes of draining. Cover and let them wilt. If too much liquid forms, remove the lid and let it simmer. Meanwhile, mix the yogurt with the flour, curry powder, lemon juice, and salt (the flour prevents the yogurt from curdling). When the spinach is soft, add the yogurt and heat through. Mix in the penne and serve.
