Ingredients for 4 servings:

  • 1 onion(s), peeled and chopped
  • 15 g butter
  • 1 tbsp olive oil
  • 2 red bell peppers
  • 2 green bell peppers
  • 2 yellow bell peppers
  • 2 cloves garlic, crushed
  • 500 g tomatoes, peeled and chopped
  • Salt
  • pepper, black
  • 2 tbsp parsley, chopped for garnish

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Lightly brown the onion in butter and oil for 10 minutes. Meanwhile, deseed and slice the bell peppers, then add them to the onion. Cover and cook the vegetables over moderate heat for 10-15 minutes. Add the garlic and tomatoes, re-cover, and cook for another 40 minutes, until the peppers are tender and soft. Season with salt and pepper, sprinkle with parsley, and serve.
