Pepino's Cocido

Ingredients for 2 servings:

  • 2 Canarian cucumbers (pepinos)
  • 1 large onion(s), red
  • 125 g sausage (chorizo), diced
  • 5 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 330 ml tomato sauce (tomato frito) or pureed tomatoes
  • 1 pinch of chili flakes, from the mill
  • 1 tsp, heaped curry paste, yellow
  • 1 shot of dry white wine

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Canarian cucumber goulash, refined with yellow curry paste

Peel and finely chop the onion and garlic cloves. Heat the olive oil in a pan and briefly fry the diced onion and garlic. Deglaze with the soy sauce and wine. Now add the tomato sauce and season with the chili and yellow curry paste. Peel and dice the pepinos and add them to the sauce. Bring to a boil, then reduce the heat and let it simmer. Also suitable as a pasta sauce.
