Pepper and cheese rolls

Ingredients for 2 servings:

  • 2 bell peppers, red
  • 2 bell peppers, yellow
  • 1 bunch of basil
  • 300g mozzarella

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 250°C. Halve the peppers, remove the seeds, and briefly rinse with cold water. Place on a wire rack and bake in the hot oven until the skin turns black. Then remove. Let the peppers cool briefly under a damp cloth. Then peel off the blackened skin and cut each pepper half into 3-4 wide strips. Rinse the basil, shake it dry, and pick off the leaves. Pat the mozzarella dry with kitchen paper and cut into approximately 2 cm cubes. Top each pepper strip with a basil leaf and a piece of mozzarella. Finally, roll up and thread onto wooden skewers.
