Ingredients for 2 servings:
- 2 tomatoes
- 1 bell pepper(s), red
- 1 garlic clove(s)
- ½ onion(s), red
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar, dark
- some salt
- some pepper
- 1 tsp oregano
- a few stalks of basil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Wash the tomatoes and peppers, remove the cores, and cut into strips. Peel the onion and garlic, finely chop each (garlic), and cut the onion into rings. Drizzle with olive oil, balsamic vinegar, oregano, salt, and pepper, and mix lightly. Finely chop the basil and sprinkle over the salad. We like this salad with scrambled or fried eggs; in summer, it’s also delicious as a barbecue salad. If you prefer something more colorful, you can use green/yellow or orange peppers.
