Ingredients for 4 servings:
- 375 g beans, white, dried
- 2,000 ml water
- 200 g bacon, streaky, smoked, cut into strips
- 1 tbsp oil
- 1 bunch soup greens, large, chopped
- 250 g onion(s), chopped
- 250 g potatoes, diced
- 1 can Tomato paste, (80-100 g)
- 1 tsp marjoram, dried
- 1 small pepper(s), dried
- 1 tbsp paprika powder, sweet
- Salt
- 100 g paprika sausage, cut into slices
- 125 ml sour cream, whisked
Instructions
Working time approx. 35 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 14 hours 5 minutes
Soak the beans in water overnight. Heat the oil and fry the bacon cubes in it, then sauté the vegetables, onions, and potatoes. Add the beans with the soaking water, tomato paste, marjoram, crushed chili pepper, sausage slices, and salt. Bring to a boil, then cover and simmer over low heat for about 1 1/2 to 2 hours. Stir the sour cream into the bean pot and season to taste with salt and paprika.
