Ingredients for 2 servings:
- 2 tbsp oil
- 2 onions
- 2 bell peppers, red and yellow
- 1 handful of olives
- 1 clove(s) garlic , optional 2
- 2 tomatoes
- 50 ml water, approx., alternatively 50 ml dry white wine
- 2 tbsp white balsamic vinegar
- 1 pinch(s) of sugar
- 1 tsp salt
- 1 pinch of saffron threads
- 1 tsp sweet paprika powder
- some pepper, freshly ground
- some lemon or lime juice
- 3 spring onions
- 250 g fish fillet(s) e.g. cod, redfish or ling
- 125 g shrimp(s), raw, ready to cook
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
First, prepare the ingredients and keep them separate. Halve the bell peppers, remove the seeds and membranes, then cut into bite-sized pieces. Slice the white parts of the spring onions diagonally into approximately 2 cm wide rings. Peel the onions and garlic. Cut the onions into wedges and finely chop the garlic. Roughly dice the tomatoes and squeeze the lemon or lime. Grind the saffron threads with salt and paprika in a mortar. Mix 50 ml of water with 1-2 tablespoons of balsamic bianco vinegar, or alternatively, use 50 ml of dry white wine. Add the spice mix and mix. Wash the fish, pat dry, and cut into bite-sized pieces. If desired, add a little lemon juice to add the dressing. Wash the shrimp, pat dry, and trim if desired. Heat the oil in a heavy, wide saucepan and sauté the onion wedges, stirring constantly, until soft. Add the chopped or crushed garlic and sauté briefly. Add the bell peppers, spring onions, tomatoes, and olives, a pinch of sugar, 2 tablespoons of lemon juice, and the liquid, grind over some pepper, and mix well. Bring to a boil and simmer with the lid on for about 20 minutes. Season to taste with salt, pepper, lemon, and/or sugar. The cooking time depends on whether you want the vegetables to be completely soft or still have a bit of a bite. Add the fish and shrimp and simmer over low heat for about 5-10 minutes. Boiled potatoes, rice, or bread are suitable as a side dish. This serves 2-3 people, depending on your appetite and the side dishes you like.
